My 2 freezers (fridge and the mini upright one we have) and our little pantry are full to the brim with food I've stocked up on from shopping the sales ads and from the meat that our parents have given us. With all that food, I figured we better start eating it down (up?), since we're planning on moving this summer (rent is getting too expensive) and why should we spend more money on food when I have a ton of it right here in the apartment?
My goal is to buy as little extra ingredients as possible and just cook with what I have. I'll still be buying the staples (bread, milk, eggs, peanut butter, etc) and fresh fruit. I have a ton of home-canned veggies, so those will be my go-to veggies for meals.
Meal 1: 1 Knorr Pasta Side (chicken & broccoli flavor) - I only buy these when they're $1 - 1 big chicken breast (4 hours in the crockpot, then shred and mix with the broth...so moist) - this was frozen from a meal Jordan made me a month or so ago - 1 pint home-canned green beans
Outcome: 3 servings (one dinner for both of us, one lunch for me)
Approx price: Less than $3
Meal 2: Small smoked turkey (all day in the crockpot; fell apart when it was ready to eat - yum!) - given to us by Jordan's mom last Christmas b/c she didn't want it - 1 quart home-canned green beans, 2 Knorr Pasta Sides (cheddar flavor)
Outcome: 4 servings (one dinner for my sister, her husband, Jordan and I) PLUS 2 cups leftover smoked turkey and 2 cups broth (thinking of making soup)
Approx price: $2 (since our only cost was the pasta sides)
Meal 3: My office orders in food frequently, and I am not above taking home the food that will be thrown away! One place that sends a TON of food is Lydia's, so the last time we ordered from there, I took home all the leftovers and made 5 8x8 freezer meals out of them. 1 8x8 pan of pasta with red sauce, 1 pint home-canned green beans (2 servings), frozen brussel sprouts (2 servings)
Outcome: 4 servings (2 days of lunches for both of us)
Approx price: Less than $1
Meal 4: 1 Lick the Spoon Chicken, Bacon & Ranch pot pie, 1 head of lettuce for salad. This was a little bit of a disappointment - Lick the Spoon is in Sioux Falls, and they were having a special on their take&bake potpies (normally $8, on sale for $5), so I ordered 6 of them to pick up over Christmas when we were in town. The potpies that Lick the Spoons serves are a very generous meal for "one", so I knew that I could get a good meal for Jordan and I out of 1 pot pie. Much to my disappointment, the take&bake pot pies are smaller than the ones they serve in their restaurant (which are curiously priced the same...). Lesson learned.
Outcome: 2 servings (lunch for us)
Approx price: $6 ($5 for the potpie, $1 for the lettuce - we have dressing, etc at home already)

I'd be planning to repot a few of my plants for...a very long time. Before we even moved to KC. That's like...planning to for over a year.
So, when mom announced she was coming for a girls' weekend, and hubby was planning to be out of town, I knew that getting my plants repotted was on my list for us. For anyone that doesn't know, my mom has a ridiculous green thumb. And she loves anything to do with gardening/plants/making things grow.
What started as me just wanting to replant the couple plants I had, turned into something bigger - and much more fun.

A NEW hanging plant, a NEW fern, the middle level is all plants I had before (an african violet Jordan gave me for a birthday, a christmas cactus that someone gave me, some kind of green leafy plant that grows and grows and grows that I got in a secret santa exchange in college, and chives from mom's garden). On the ground we have an amaryllis that I gave to Jordan for Christmas (that I got for free), a pot from mom with NEW flowers, another type of plant that aunt Karen gave me, and another one of those green leafy plants (this was the original one - the other one started from this one).

I've been blogging a lot about saving money...mostly centered around saving at the grocery store for mealtime. I have other ideas for saving money elsewhere in your home, but those will come later.
For those of you that are interested in what the Larsons have been up to in KC the last few weeks...it's been not-so-exciting. Jordan's been busy studying and studying and...yep, that's about it. Here's what we've been up to since February started:
At trip to St. Louis!
The 1st weekend in February, I went to St. Louis with Amanda, a friend and fellow-Pampered Chef consultant, for PC Spring Launch. We had a great time learning about the new products (and even got to take home a new piece of stoneware!) and an even greater time enjoying the city. Amanda grew up in St. Louis, so we got to stay with her grandparents (yay for free overnights!) and went to church with them on Sunday. We enjoyed dinner at Joey B's with her aunt, cousin and brother. I ordered the Pasta Primavera (7 fresh veggies served in a garlic butter sauce with angel hair pasta), which was HUGE. I took the rest home and made grilled chicken breasts to go with it for Jordan's and my dinner. (See? Even saving money at a restaurant! A $12.99 meal became 3 meals!)
We got some delicious (and SUPER affordable) goodies at Missouri Baking Company on The Hill - I got 4 little cookies and a piece of german chocolate cake (for Jordan, his fav) and it was only $3something. A note about The Hill - this is the Italian part of town and there are all sorts of cute little Italian shops and restaurants. They have the Italian flag painted on things and Amanda told me that the area is still run by the Italian mafia...really!!
We also got some provel cheese and salami from a little Italian grocery store with a meat counter. Yum. Here's what wiki had to say about Provel cheese: "Provel is a white processed cheese that is popular in St. Louis, Missouri.It is flavored with Cheddar, Swiss, and provolone." Spot on. And it's delicious.
Last but not least, we got sandwiches from Amighetti's to eat on the drive home. The Amighetti's special is made with ham, roast beef, genoa salami, brick cheese, lettuce, tomato, pickles, onions, pepperoncini with Amighetti's secret dressing on fresh-baked Italian bread. Also yum. And a definite Jordan sandwich.
When Jordan and I visit St. Louis, we're doing all of this (and more).
Bringing home the bacon
I've been doing some freelance editing for a friend (at her job) so that's been keeping me busy in the evenings, I've probably put 10-15hrs in for her these past couple weeks. Every little bit counts when it comes to the budget!
Working off the bacon
I decided to kick my workout routine into high gear (aka actually go to the gym on a consistent basis)...so I needed some motivation. If I work out for 30+ mins, I get $1. YAY ME. bwaha. Since the 7th of January I've earned $17. I haven't decided what my reward is going to be with the money that I earned...but it's motivating me to think that I'm "earning" money. Maybe that'll be my fun money, like, I have to earn it, I don't just get it. (Jordan would tell you that I never spend any fun money on myself, lol.)
A new part of my work-out routine is this Killer Core Yoga Workout that my friend Emily posted about. It says beginner, and you don't think it would be that bad, but it seriously is KILLER. I've done it twice now, and my goal is to try to do it every other day (and on the opposite days do cardio and weights at the gym). My abs were dying. In a good way. Go ahead, print it off and try it yourself...this is something easy to do right in your home!
Game Night
We had 5 other med school couples over for games and munchies after finals week...and I forgot to take any pictures! So lame. We had a really good time playing Settlers and the other half of the group played Apples to Apples. There was also delicious food that everyone brought to share. And wine. And beer. And margaritas. It was a good evening.
And that's about it! We'd still love to have visitors, so if you're ever feeling like a little vacation, KC is pretty fab!
This is our 3rd married Valentine's Day (which we celebrated today, since Thursday was Jordan's last final and he was decompressing from a crazy finals week and yesterday we had friends over), and Jordan has made it a tradition to cook me dinner and do the dishes afterwards. What a good man.
He always spoils me with something that I would never buy the ingredients for (aka, something that uses spendy ingredients, because [as you all know from my previous posts] I'm extremely frugal at the grocery store). This year was no different. I got spoiled with Linguine With Seafood and Sundried Tomatoes (recipe posted below, courtesy of allrecipes.com).
Since I'm keeping track of how much we spend, Jordan spent $25 on this meal (thank you to mother-in-law Lisa for the Valentine's gift that paid for this meal!). The recipe was enough for him and I to have a very filling (and super-delicious) supper, plus 3 lunches for me and 2 lunches for him. That's approx $3.60/serving.

Linguine With Seafood and Sundried Tomatoes
1lb vermicelli pasta - $0.99 (linguine wasn't on sale, lol)
1/2 cup olive oil - had on hand
1/2 cup butter - had on hand
4 cloves garlic, minced - had on hand
1lb bay scallops - $9.99/lb
1lb medium shrimp - $8.99/lb
1 oz jar clam juice - $2.97
1/3 cup chopped sun-dried tomatoes - had on hand
1/4 cup chopped fresh parsley - $0.99/bunch
2 1/2 tsp lemon zest - 1 lemon $0.88
1/4 tsp salt - hand on hand
1/4 tsp crushed red pepper flakes - had on hand
Make pasta.
Add butter and olive oil to skillet. After butter is melted, add garlic. Saute until tender.
Add scallops and shrimp (peeled and deveined) to skillet. Cook until shrimp is pink (about 10mins), then add clam juice, salt and pepper. Cook 3mins more.
Add tomatoes, parsley and lemon zest to pasta. Toss. Pour seafood mixture over pasta. Enjoy.
I guess that's sort of what this blog has turned into: a recap of the past week of our life. Maybe that's boring? (or maybe it's not) Either way, I guess that's where I'm at right now. Recapping the week.
Jordan had his MusculoSkeletal midterm on Monday. He passed (yay!), and was able to take it a bit easier this week than the two weeks previous, but he's still been studying like it's his job (which it is). To celebrate, we had a few friends over that evening and ended up watching The Princess Bride. Don't ask me why, but it was the first time I'd ever seen this movie. Ridiculous, I know. Some of you are probably wondering how this could have happened. (After all, it came out in 1987.) The conclusion that I've come to is that we didn't watch that type of humor at our house growing up. We were more of the John Wayne/Star Wars/Indiana Jones/Sound of Music type of family. (and, yes, I know, those don't go together at all) At any rate, we watched it. It was hilarious and wonderful. (But, not as wonderful as the book, which I read in 3 days the week prior to watching the movie. To be honest, the movie was a let-down compared to the book - but, like it always is, the book was just better.) (So if you haven't read it, you probably should read it immediately.)
On Tuesday, we met up with Jordan's KCUMB Big Brother (each 1st year is matched up with a 2nd year who can answer questions, give advice, etc) and his fiance at the The Flying Saucer for Trivia night where each team is to "Test your knowledge of useless information and win some kick-ass prizes!" (as said by The Flying Saucer's website) (and you can't use your phone to find answers - that's cheating!) And win we did. Our team took 2nd place for the evening and got a $30 gift card (to share). Steve and Allison have been coming for over a year and it's the first time they've won - Jordan told them it was because I win everything. (which isn't exactly true, but I do win. A lot.) Wednesday meant a lunch date with my aunt Kathy. She brought a fabulous Kono GrillAvocado & Chicken Club with lettuce, tomato, applewood bacon, havarti and chipotle mayo served on a ciabatta bun with taro chips. So delicious. And we had a wonderful conversation as well. So blessed to be living near to this aunt...who I used to only see a few times a year!

Wednesday evening, my new friend Emily invited me to a quarterly birthday club where I even received a gift for my September birthday. I'll let Emily tell you about our evening - be sure to check out the cake our host made! Such talent. Thursday was just spent at home catching up, since I'd been running around for the rest of the week!
Friday went back to being busy. After work I went to Josh & Audrey's and Audrey and I carpooled to The Melting Pot at the Plaza to enjoy cheese fondue and chocolate fondue with the KCUMB spouse group, The Other Half. Fondue is $5/person during happy hour, if you eat in the bar area. Otherwise it's $8/person. I'd like to go again so Jordan can experience it, too! (Don't worry, he doesn't ONLY study...on Friday he went out with a few other guys for burgers and beers.)

Saturday I babysat again for the same couple whose kids I watched a few weeks ago. Such cute boys. Afterwards I ran a Pampered Chef booth at Gladfest for 3 (very chilly!) hours. I got a couple good leads and hope maybe one of them turns into a show. Jordan got back from the school around 8pm and we enjoyed frozen pizza while watching Mission Impossible: Ghost Protocol, a great redbox pick made by yours truly. (It seems like I always pick terrible redbox movies, so the fact that it was really good this time was a big win.)
After church today, I made up a pot of soup for lunches this week. And, for the first time, we turned on the heat for a bit...it got down to 29 outside and the apartment was at 60. I thought that was maybe a little extreme. (For those that know me, it's my choice to keep the heat off for as long as possible to save some $$...ridiculous, yes. Last year, in Sioux Falls, we made it into the first week of December before we turned on the heat!) I would have held out a bit more, but our lease said something about pipes freezing and bursting and having to pay for that and that sounded more expensive than turning on the heat. Ha!
We're getting into the groove of things here at the L household. For Jordan, that's mostly studying. He'll occasionally take a break to watch a TV show (he loves Burn Notice) or a movie (this weekend's choices were Freelancers and the most recent Sherlock Holmes).
For me, that leaves a lot of free time (or at least more than hubby). I've never been good at just having "open" time, so here's what I've been up to in the past week:
Work. Yeah, it deserves to be top of the list only because it takes up most of my time. 8:30-5:30 every day. 45-min commute to work (thank you, big-city traffic) and 30-min commute home (again, big-city traffic...at a normal time [re: not rush hour] this commute would take 15-20mins). So, this is my day from 7:45am to 6pm.
By-choice work. This week, it was freelance editing for a friend's company back in SD. I'm super thankful for the extra cash and I think Jordan was super thankful that I had a quiet activity to do while he was studying.
College friends. Those "long" commutes leave lots of time to ... sit in traffic. I'm so excited that 2 of my bestest best college friends and I decided to have weekly phone calls to catch up. These ladies are my FAV. One of them I haven't seen since my wedding in March 2010 and we've made plans to meet up before this year ends. So. Excited.

Cooking. Have I mentioned how much I LOVE to cook. It must be a stress reliever to me. This weekend included canning 4 pints of mom's tomatoes (brought from the garden in SD!) with onion and garlic, making creamed cucumbers (hubby's fav) with cuc's from mom's garden, cooking Thai Peanut Chicken Stir Fry for my lunches (this week, I'm going a step [or 12] above my standby egg salad sandwich!), BBQ Beef Shepard's Pie (mashed potatoes courtesy of mom's garden), SPICY salsa that J promptly devoured in 2 sittings (habanero courtesy of mom's garden), and a scrumptious study-break smoothie [note alliteration, hehe] made with watermelon (courtesy of Kay's boyfriend in West River SD), strawberries (courtesy of dad's wallet from the KC farmer's market) and 1 lime pudding (33 cents, courtesy of my cheapness at the grocery store).
Yum for later. Yum for now.
Errands (and others). Bank. Grocery store. Walmart. Laundry. Checkbook balancing. Haircut (nothing major or exciting). Those regular sort of things.
Crafty. I was feeling creative this weekend and spent some time making these little beauties...pics to come later of what they're for...
Church. A thoughtful sermon over 1st Corinthians 7:36-40 (while heavily relying on Eph. 5:22-33). Here are a few quick thoughts:
Eph 5:31 "For this reason a man will leave his father and mother and be united to his wife, and the two will become one flesh." I never thought about this before, but this verse is where the "leave and cleave" phrase comes from (be united = cleave). Leave and cleave = commitment and passion = love and respect.
In the past, people married for social status, money, etc - marriage was all about commitment (passion was missing). Today, marriage is all about passion (commitment is missing). God sees marriage as BOTH commitment AND passion.
I've heard this many times before, but a reminder is always welcome: Marriage is a SMALL representation of something bigger --> the relationship of Jesus with His people (which is faithful, covenant love). Our marriage is to reflect Christ's love. It's not perfect, but it's the closest we'll get on this earth.
Zephaniah 3:17 "The Lordyour God is in your midst,a mighty one who will save; he will rejoice over you with gladness; he will quiet you by his love; he will exult over you with loud singing." This verse portrays God as a lover. If you do not embrace God as a lover, you will embrace other lovers as God. This followed up the point that we tend to put our lovers (our spouses, etc) in a place of worship - that place is only for God. If we always embrace God as a lover, He will have the first and foremost place of worship in our hearts.
So, nothing major this week. But sometimes it's the quiet weeks (yeah, this was a quiet week for me, lol) that show you that you've really settled in and that a place is becoming home.
Holy toledo! I think I brought my "crazy-busy" schedule habit with me to KC...I had good intentions to get this written up on Wednesday or Thursday, but that didn't happen. Here's a bit of what we've been up to:
Cooking!
With all this free time (haha), I got back to cooking new and exciting meals. Sometimes I just get stuck in a rut when it comes to meal times and that's for a few reasons: 1. I can eat the same thing for many meals in a row and never get bored. 2. I'm a cheapo...err...very frugal at the grocery store. 3. Yeah, #2 pretty much covers it. Jordan, on the other hand, doesn't enjoy eating the same types of meals indefinitely so I felt it was my wifely duty to serve him up some new recipes. Left to right: Taco night , Lemon Pepper Chicken Divan and Spinach- & Cheese-Stuffed Manicotti. Bottom two pics: Jordan enjoying his Shredded Pork Tostada and...YELLOW watermelon!!! We bought the watermelon at City Market for $4, the guy we bought it from said, "That there's a yeller watermelon. It don't got no seeds and it's yeller on the inside." And sure enough it was!
I didn't get pictures of our Orange Chicken Lo Mein or the Fiesta Chili Mac - rest assured, they were delicious. All of the recipes (except taco night) are from Pampered Chef's More Weekday Dinners Done recipe collection. This affordable little collection of recipes ($6.50) gives you 2 weeks of meals in one easy envelope - each week has 5 recipes that average $2/serving. The recipes are simple and delicious...and there's even a grocery list card that you can take to the store with you - SO EASY. There's another collection, too (Weekday Dinners Done). These things are one of my very favorite PC products!

Interviews
Some of you were maybe beginning to wonder if I was going to get a job or if I was going to just take up blogging, hanging out and cooking as my occupation. That all sounds wonderful, and if only it paid the bills I think I'd do that...it's my long-term goal. I plan to be doing that in...oh...10+ years, hehe. I've actually had quite a slew of interest lately, which has been encouraging. Tomorrow I have THREE interviews - 8:30, 10:30, and 1:30 - so if you think of me, pray that I'll have stamina and that I won't get to hot in my suit in this heat! I'm going to be downtown all day; not enough time to come home between interviews. So I'm hoping to find a nice little coffeeshop with wifi. The interviews though - the 8:30 and 1:30 are 2nd-round interviews. I'm one of two candidates that they're debating between. Both of these are account manager positions at advertising agencies and I'd be SUPER stoked to get either job. I'm praying that a job offer comes in this week b/c I've been saying that ideally I'd like to start my job on the 13th...and that's Monday!
Going to the Movies
If you know us, you know that we don't "waste" money at the movies. We rarely see movies in the theatre, so it's a pretty big deal when we do go. In the past month we've seen TWO: Batman: The Dark Knight Rises and Brave. I'm sure most of you have seen the new Batman, and if you haven't, you definitely need to see it. Brave was cute, but definitely had a storyline twist I was expecting! I have a soft soft for animated movies...so I really liked it.
Coffee
Who's a coffee drinker? Jordan MUST have his coffee every AM, but he's not a Folgers guy...which means I had to do some frugal sleuthing to come up with an affordable, delicious coffee that he enjoyed. Enter World Market coffee. Price ranges from $6-$12/bag. Not cheap enough for me. We just got 16 bags for about $3/bag. Follow these steps:Join WM Explorer Club.
Only purchase coffee on Wednesdays. (Normally, 1 bag of coffee = 1 point, on Wednesdays 1 bag of coffee = 2 points. After you collect 12 points, you get a free bag of coffee.)

Vacation Bible School
I was lucky enough to help my aunt Kathy with the VBS on base this past week. I was a tour guide for 10 3rd and 4th graders and lead them through the Daniel and Babylon scene. It was amazing how much work went into these 3 days of VBS. There were 60 3rd and 4th graders alone....I wouldn't be surprised if there were 500 kids at this VBS. The planning was phenomenal. Each day, I took my kids to Club Adventure (where they saw a skit about Daniel and the Lyons performed by high schoolers), Music, Video (to see a Daniel video), Recreation (outdoor games), Snack Time, and Courts. Each day we went to a different Court - Fiery Fork, Captive Corner or Slumber Section (that's not the right name for the Slumber Court...now it's escaping me) and the kids did crafts, saw a skit about a specific part of the Daniel story and got to experience things like the Daniel and others may have experienced when they were taken to Babylon - such as different foods (greek yogurt and liverwurst), being spoke to in a different language, trusting God when you're afraid (they put their hands into a box that had something in it...they didn't know what - jello, etc).
Fall Launch
Pampered Chef Fall Launch was in Omaha, so aunt Karen and two others from my SF team came and I was able to see them for the day. We got to see all the new products for the fall selling season and I am super pumped to get my biz going in KC. I've been trying super hard to find ONE person in KC that would like to host a show for me to help me get my biz started. If you're from KC, maybe you could help me! I'd sure appreciate it! And you'd get new, free products for your kitchen!
I figured it was about time for me to post something about where we're living!
Turns out, God had our best interests in mind (go figure!) when He had us moved from the 3rd-floor apt to this 2nd-floor one. We're closer to the pool, our neighbors are SUPER quiet (at the other place there was a REALLY yippy dog, and we were only there for about 30mins!) and the rent and utilities are cheaper. Thanks, God :) Also, as an apology for the mix-up, the apartment staff gave us 5 accent walls instead of 3! That was definitely a treat, and I couldn't be happier with how the painting turned out! (The painter, who was an older man that looked like Santa, came on Tuesday morning and told me to "remember to set out the cookies and milk in December." hehe)
Here's a little tour of the part of the apartment that's decorated - thanks to aunt Kathy for coming over on Wednesday and helping me put up pictures! At the last apartment...I didn't put anything up for almost six months, so this is a vast improvement since tomorrow marks 2 weeks in KC.
Other than our apartment being way more fabulous than I thought we'd have this early on, the apartment complex itself is really, really nice. There are 2 resort-style pools (that's what they call them, and they really are - tables with umbrellas, beach loungers, a top-of-the-line propane grill for our use, fabulous potted plants...it's really fancy), we've already been to one resident breakfast (happens once or twice a month on a Saturday), and there's also 3 free fitness classes a week (H2O bootcamp, Aqua Zumba and Yoga - I've been to one so far and hope to make it to them every week), a free cooking class and a spa night each month, and bunco in the clubhouse every Friday night!
There's a fitness room, too, which is actually really nice for an apartment - the machines are new and I've been heading there in the AM to work out to the Food Network. I feel really spoiled living here, and I hope I keep on being thankful for all the things we have here that we don't deserve. So far, it seems like this will be a great fit for the next four years during med school. I'm excited to get the rest of our pictures/decorations up and to show you the rest of the apartment!
